Not all leftovers can be boxed up and eaten for lunch the next day – you’d get some strange looks if you started gnawing chicken bones at your desk. However, they can still be saved from the landfill. Animal bones, such as chicken, lamb and beef can be cleaned, roasted and then boiled with water, herbs, vegetables and meaty offcuts to create a long-lasting broth or stock. Store the stock in the fridge and use it as a base for soups, casseroles, stews and other rich dishes. Vegetarians can make stock with similar leftover ingredients, minus the meat!
